I'm back with a recipe. I've not been blogging for so long, I've to stop to think how to do it, lol. The recipe I'm sharing are these piggies mooncakes, which are usually sold in colourful baskets. They taste similar to the baked mooncakes, just without any filling inside.<br />

The usual ones we see here are the colourful plastic ones. You can see the bamboo basket in my pictures, I recycled them as props, lol.<br />

To make chicken, firstly use pasta sticks to attach corn (as chicken's beak) onto the hard boiled egg.<br />

For chicken's eyes, cut out nori using a hole punch. For chicken's comb, use a heart shaped food pick. (Alternatively, you can also cut from red bell peppers and attach them on using pasta sticks. )<br />

It's been a while again. When I was blogging regularly, I used to think it would be so hard for me to stop this routine of mine, it was the norm for me to turn on my computer then after my boys have gone to bed. I don't know why exactly I stopped doing so, I guess I just got lazy along the way. The me now find it hard to imagine why I can find the energy to stay up to blog then, I would now much rather go to bed early or do other stuff instead. And once I stopped this routine, it's so difficult to blog again. I doubt I will ever go back to blogging regularly again, but I do hope I can drop by at times to share some recipes. Meanwhile, I'm still sharing my creations over at <a href="https://www.instagram.com/bentomonsters/?hl=en" style="color: #e06666;"><span style="color: #e06666;">Instagram</span></a>, not as active as I used to be too, but I still update there weekly. Just some updates that I've been meaning to jot down on the blog at the beginning of the year, they are more for myself, I guess. The last week of 2016 actually ended very badly for me. :( Something I dreaded/hate had to come true, it's something I won't be able to forget for the rest of my life, the many doubts I have won't ever be cleared up. I'm not going into any more details, but I am trying to move on, much as I want to, I know I won't be able to forget the hurt and pain, but I will move on, and I have to move on.<br />

2016 also marks the end of a chapter in making bentos for IT, he has moved on to secondary school this year, and I finally stopped packing bentos for him. He was the reason I started on making charabens, it has been a good 6 years of packing bentos for him. I never expected to last that long, since bringing bentos is not common here, I'm really grateful he has never asked to stop and rejected bringing them all these years. He has been doing well in secondary school so far, it's not the school he thought he would be going initially, but I guess it turns out to be a blessing in disguise. He is happy at the school, and since hours are so much longer now, he is thankful for the close proximity. He even gets to come home for lunch on some days before going for CCA.<br />

Enough updates for now, it's getting too lengthy. Let's go on to the recipe for these pork floss hedgehog bread buns I did a while back. I made two designs, pull-apart ones and bread rolls. The recipe is for the pull-apart ones, but you can also use them for the bread rolls, the design for bread rolls are easier, as I skipped the limbs.<br />

I've been using this modified version of a pull-apart bun recipe I found on Cookpad. I quite like it so it has been my to-go recipe for pull-apart bread buns, it works quite well when you need to have different coloured bread rolls for your pull-apart bread bun's designs too. You just need to portion your dough and colour them prior to proofing.<br />

This one was from my first batch. The bread buns are a little brown here. I experimented with having the bread buns white in my second attempt. I can't decide which version I prefer. The recipe below is for the white version, if you prefer them a little brown, just up the temperature by 10 degrees celcius and don't bother covering with aluminium foil.<br />

<u><b>HEDGEHOG PORK FLOSS PULL-APART BREAD BUN RECIPE</b></u><br />
<b><u><br /></u></b><b>Ingredients:</b><br />
200g bread flour<br />
1 tbsp sugar<br />
1 tsp salt<br />
5g corn syrup<br />
10g unsalted butter, at room temperature<br />
5g instant yeast<br />
140g milk<br />
Pork Floss<br />
Baked/fried pasta sticks<br />
Chocolate chips<br />
Chocolate pen(optional)<br />
Pink food marker(optional)<br />
<br />
Mayonnaise coating:<br />
- 3 tbsp condensed milk<br />
- 9 tbsp japanese mayonnaise<br />
- 1 tbsp corn syrup<br />
<br />
<b>Method:</b><br />
<ol>
<li>Mix all the ingredients, except butter, in a large bowl to get a dough. Add in butter and knead until dough is springy and soft, this takes around 10 minutes. If you have a bread maker, you can just use the dough function for this step, as well as step 2.</li>

<li>Cover the dough with cling wrap and keep in a warm place for it to rise. This takes around an hour and the dough should double in size. Do a finger test to check if it's ready.</li>

<li>Using the plain dough, roll out 13 portions of dough around 25g each, one at a time and form them into balls. Cover with a damp cloth or cling wrap and set aside for 5 minutes.</li>

<li>Roll out the 12 portions (the remaining 1 portion is for the limbs) of dough again, one at a time and form them into balls. Grease two 4in round pan, place an overturned ramekin in the centre of each. (I only used 1 pan in the picture, I used the rest for other designs) Arrange 6 dough in each pan. At this point, there will still be space, as the dough will expand in size. Cover with cling wrap or damp cloth and let the dough proof for 40 minutes.</li>

<li>Using the last dough, shape into hedgehog's limbs. Cover with cling wrap or damp cloth and let the dough proof for 40 minutes. Preheat oven to 180 degrees celcius, for the bread rolls, bake for 5 minutes. Turn down to 140 degrees celcius and bake for 20 minutes, cover with aluminium foil in the last 10 minutes. For the hedgehog limbs, just bake at 140 degrees celcius for 10 minutes.</li>

<li>While the bread is cooling down, prepare mayonnaise mixture by whisking all ingredients together. Spread on mixture generously on the parts you want the pork floss to be on. Top on the pork floss.</li>

<li>Use baked pasta sticks to poke in hedgehog's limbs. Use chocolate pen to draw on the features, I used a chocolate chip for the nose. If you do not have a chocolate pen, melt the chocolate chips and use a toothpick to dip in to draw. Use a pink food maker to draw on the blush.</li>

Since Despicable Me 3 is going to hit the cinema soon on 15th June 2017, I came up with a Despicable Me 3 Themed Breakfast, I'm going to share step-by-step photos in this post, so you can create your own too. <br />

I chose to make Minion Mel for my boy's breakfast. He's made out of cheese, ham and nori. I dyed the ham blue using butterfly pea flowers. I've shared about this method before, it's always tricky to get nice blue colored food naturally, so a great way to do this without using artificial food colourings, would be to use butterfly pea flowers.<br />

Place the (cut) tracing paper on your choice of food (eg. Cheese), and cut food along the paper outline.<br />

You could use cheese as the Minion's body, and cut out the drawn parts with a knife, scissors, or toothpick.<br />

To create the Minion's overalls, dye a piece of ham blue by soaking in butterfly pea flower or blue food colouring mixed with hot water. Remove ham from the water when you are satisfied with the shade of blue, dry ham on kitchen towels before using.<br />

Cut the ham along the outline of tracing paper with a cutting knife or scissors.<br />

Assemble the Minion's body and overalls.<br />

With a pair of scissors, cut out the nori (Japanese seaweed) for the Minion's details.<br />

For the Minion's eyes, cut out cheese by using a piping tip or a round cutter. For the Minion's G symbol, use a knife or scissors to cut out from nori.<br />

Over the past week, I had the chance of trying out the The ASUS Zenbook Flip, their latest laptop launched. Yes, you read it right, it's a laptop, though it looks like a tablet in my picture above. This is because, the laptop not only comes with a touch screen, it can also be flipped 360 degrees, allowing you to adjust the screen into four convenient viewing mode. The one I'm using above is the tablet mode.<br />

I found it especially useful when I need to search for recipes to refer to when preparing food. In the picture above, I was searching for the Rilakkuma puff pastry soup on my blog, as I wanted to do a remake of it. This time, I used the same idea but made it into a pie instead.<br />

Here are the Pikachu steamed buns, which I filled with ham, cheese and scrambled eggs. It's not the usual bun fillings, but this combi goes well with the steamed buns. These Baymax cookies were made with my usual german cookies recipe. These cookies have a crumbly texture that just melts in your mouth. This recipe only requires a few ingredients, is very easy to make, and it's very versatile, as you can mould the dough into almost any characters you fancy.<br />

125g butter<br />
50g icing sugar, sifted<br />
125g potato starch<br />
80g cake flour<br />
1/2 tsp charcoal powder<br />

<li>Beat butter and icing sugar till light and fluffy.</li>

<li>Sift in potato starch and flour, mix till a soft dough is formed.</li>

<li>Scoop out around 3 tbsp of the dough and mix with charcoal powder. Mix till it turns black. Wrap both the black dough and the white dough separately with cling wrap and refrigerate for half an hour.</li>

<li>Take out the white dough, mould into 2 balls, 1 for the head and 1 for the body(mould the body slightly bigger than the head) and join them together. I measured the dough for this so that it's more consistent, but you can choose not to do so if you prefer. For your reference, I measured 8g for the body and 6g for the head.</li>

<li>Take the black dough and roll into two small circles for Baymax's eyes. Roll out a thin strip for Baymax's mouth. Alternatively, you can also add water a few drops at a time to the black dough, till you get a thick paste, that you can fill in a pipping bag and pipe on the details.</li>

I thought I'll share this Hello Kitty milkshake in this post as well, since there is a donut on it. I made this to share with my boys after their exams. I've seen lots of version of this ultimate milkshake and thought I'll try to recreate it.<br />

<li>Dip the almonds in white chocolate before placing them back in the slits. Dip the donut in white chocolate. If you find your almonds dropping when you turn over the donut to dip it in the chocolate, you can scoop the chocolate over the donut to coat it instead. </li>

<li>You will need a ribbon mould to make Hello Kitty mould. Alternatively, you can also use two heart shaped sprinklers to form the bow. Melt pink chocolate, pour into the mould and leave it to set in the fridge before removing. If you can't get hold of pink chocolate, add on a pink icing colouring to white chocolate to colour it pink. </li>

Sorry, if you are not, you probably won't understand what I'm rambling about in this post, lol. I've been addicted to DOTS for the past two months, I usually wait for the drama to be near the end before I start watching, so that I can be spared the agony of waiting for new episodes every week. However, I really like the two leads, Song Joong-Ki and Song Hye-Kyo, and I felt this story would be good, so I started watching from episode 1. I like Song Joong-Ki, and also Yoo Ah-In since SungKyunKwan Scandal, but sadly, I don't really like their subsequent dramas, so I never did finished watching those. As for Song Hye-Kyo, I like her since Autumn in my Heart, the very first Korean drama I watched and I always think she is the prettiest Korean actress.<br />

I really enjoyed DOTS, I think it's my favourite drama so far, although I know some people watched and still can't comprehend what the hype is all about, my hubby is one of them. -_- There are flaws here and there, but the leads played their roles so well, I guess I overlooked all those. I think the best parts of DOTS were all in Urk, the last 4 episodes could have been better written, especially so since it's pre-produced, I don't know why the writers don't develop some parts in those last few episodes better so it makes more sense. But never mind, the happy ending makes up for it, lol.<br />

<li>Rinse the pickled sakura to remove excess salt and soak for 30 minutes. Gently pat dry the flowers on paper towels. </li>

Leave to cool and place in the fridge to chill for half an hour. </li>

<li>For the top layer, boil all the ingredients except honey syrup in a pot and stir to boil at medium heat. Remove from heat and add sakura honey syrup into it and stir to mix well.
Pour mixture into the mould. Gently place the sakura blossoms into the mould , gently shake the flowers in the jelly liquids they will open up. You can use a toothpick to adjust the petals.</li>

Make sure the colour is a shade or two darker than the eventual colour you want, as the batter will be lighter after mixing in (B). Set aside.</li>

For today, I'm sharing these Totoro melt in your mouth cookies. This long overdue recipe is from last year. I made a few variation of german cookies and this one was one of them.<br />

<li>Divide dough into 3 portions, around 300g, 50g and 20g. Colour 300g of it using black sesame. Colour 20g of it using charcoal powder. Leave the 50g plain. Wrap the dough separately with cling wrap and refrigerate for half an hour.</li>

<li>Take the grey dough dough and roll into two small balls, flatten them a little into ovals and place on the top of the cookie.</li>

These are lemon chiffon cake, if you want to make plain ones, just substitute the lemon juice in my recipe with milk or water, and lemon zest with vanilla extract.<br />

2 egg yolks<br />
30ml lemon juice<br />

40g cake flour<br />
pinch of salt<br />
1 tsp lemon zest<br />

1/8 tsp cream of tartar<br />

<li>Prepare egg shells by using a spoon to gently crack the narrow end of the egg, make a hole and drain the contents. Remove the white membrane inside the egg. </li>

<li>Add in yellow food gel colouring using a toothpick, mix well, make sure the colour is a shade or two darker than the eventual colour you want, as the batter will be lighter after mixing in (B). Set aside.</li>

<li>Place egg shells in cupcake cases, so that they can stand upright. Fill 12 egg shells with batter till around 2/3 full. Pour the remaining batter into muffin cups or mould (these will be used to cut out Gudetama limbs). Bake at 150C for 15minutes or when a skewer inserted comes out clean.</li>

This totoro toast is very simple to make, I toasted multi grained bread, and then spread on some cream cheese for Totoro's tummy. The other ingredients used were cheese, cucumbers, olives and almond.<br />

I made myself a smoked salmon salad with honey mustard dressing and a honey lemon drink for lunch. I used Huiji Honey for the dressing and drink. The sleeping bunnies were made from quail eggs and nori.<br />

I'll start off with Donald. Since this is for sushi, I mixed some sushi vinegar to the rice before shaping it with cling wrap.<br />

I used two different size oval cutters to cut out the bill and cheeks. I used egg for the bill and the pink part of kamboko(Japanese fishcake) for the cheeks. You can also use different size straws and pinch it to an oval to cut. For the bow, I cut out two heart shapes from tomatoes, using a pair of scissors.<br />

For Pooh, add some mashed egg yolk to sushi vinegar rice to colour it yellow. Using cling wrap, mould out the rice, I moulded the back half of the sushi lower so that I can place the ikura on that part.<br />

Cut into a circle using a round cutter. This step is optional, it's just easier and neater if you fold a cone from a circle.<br />

Make a cone using aluminium foil and wrap the bread around it. Bake at 180 degrees celcius for 5 minutes, flipping over halfway.<br />

Fill the top with salmon roses and lettuce, you can use pasta sticks to secure the roses if you like. However, if you pack them in compactly, you don't really need anything to secure them.<br />

For the wrap version, you can skip the first 3 steps and just wrap it around the aluminium foil and toast. This is bigger, so you will need to fill it up with more ingredients, I used scrambled eggs, lettuce and shaved ham to fill the inside. The roses are rolled up from ham, instead of salmon. Pooh bear and hearts are shaped from mashed potatoes, I did a tutorial on how to mould using mashed potatoes before, you can take a look <a href="http://www.bentomonsters.com/2014/10/wagashi-and-mashed-potato-duck.html">here</a>.<br />

This is matcha pudding at the bottom, with Baymax made of Shiratama on top. Shiratama is the Japanese version of our Chinese Tang Yuan (glutinous rice balls). They are quite similar, so if you like, you can substitute with Tang Yuan recipe.<br />

Shiratama goes well with the pudding but these matcha puddings taste great on their own too. The pudding takes server all hours to chill, so I suggest you make the pudding a day in advance. <br />

<li>Add 3 tbsp water to gelatine sheets.</li>

<li>Melt gelatine sheets over a water bath. Once dissolved, remove from heat and set aside. </li>

<li>Pour milk into a saucepan and bring to almost boiling. Off heat, once small bubbles are seen. Add in sugar and whisk till sugar are dissolved.</li>

<li>Add 2 tbsp of milk to matcha powder from step 1. Whisk well till there are no lumps.</li>

<li>Add in the rest of the milk and gelatin, mix well.</li>

<li>Pour into ramekin or bowls and chill several hours in the fridge till the pudding has set.</li>

<li>Knead till a smooth dough is formed.If the mixture is too dry, add a little silken tofu till the dough is just right.</li>

<li>Mould out Baymax using your hands.</li>

<li>Use food marker to draw on their features. Alternatively, you can also take a little dough and mix with black food colouring or charcoal powder, and use that to mould out the features instead. Cook them in boiling water till they floats. Remove and place them in cold water.</li>

I first shared about these marshmallows last December on my Instagram, and I've been receiving requests for the recipe. <br />

The delay in sharing was mainly due to two factors. I needed to test the recipe another time to confirm the measurements of the ingredients. I have no idea where you can buy the cat mould, which is essential to create these. I do not know where to get it in Japan or online. I happened to chance upon the mould in Japan, I am not even sure of the shop I bought it. -_- Thanks to a reader for the heads up, you can find a similar mould on <a href="http://www.amazon.com/Silicone-Shape-Mould-Fondant-Decoration/dp/B014BVHES4/ref=sr_1_11?s=kitchen&ie=UTF8&qid=1455013033&sr=1-11&keywords=silicone+cat+mold">Amazon</a>. It's a single mould, so you can only make one at a time or you have to purchase more. If you have come across the mould that is the same as mine, kindly leave me a comment or email, so I can update this post for the benefit of anyone who might be interested.<br />

If you can't get the cat mould, you might want to try out this recipe using other moulds. I tried it out on a Hello Kitty mould and a cat paw mould and it works too.<br />

I've experimented with both food markers and melted chocolate to draw the features, they both work, so I'll leave you to choose which one you prefer to use.<br />

<b><u>KITTY MARSHMALLOW RECIPE</u></b><br />
<b><u><br /></u></b>
<b>Ingredients:</b><br />
94g icing sugar<br />
54g egg white<br />
100g corn flour<br />
42g water<br />
94g corn syrup<br />
4 gelatine sheets<br />
1 tsp lemon juice<br />
Non-stick spray<br />
Melted chocolate/food marker<br />
Brown food colouring<br />

<b>Method:</b><br />

<li>Coat the silicon mould with non-stick spray, make sure you coat the small corners and edges well, else you will have difficulty removing the marshmallow from the mould later.</li>

<li>Soak gelatine sheets in water. Once soft, drain water away and set aside.</li>

<li>Add 20g icing sugar to egg white, beat till peaks are formed. Add in lemon juice and set aside. Don't remove from mixer.</li>

<li>Add 74g icing sugar, 94g corn syrup and 54g water to a pot. Cook and keep stirring till the temperature reaches 118C. This step is important, make sure you measure using a thermometer.</li>

<li>Remove from stove and add in gelatine. Mix well till there are no lumps.</li>

<li>Add the mixture from step 5 to the egg white at step 3. Turn on the mixer and stop once everything is well mixed.</li>

<li>Scoop out a small portion and add in brown colouring.</li>

<li>Fill the mixture into pipping bags.</li>

<li>Snip off ends of pipping bags, pipe out one of the cat's ears and paws using brown mixture.</li>

<li>Use white mixture to fill up. Leave in the fridge for 2 hours.</li>

<li>While the mould is in the fridge, pan-fry cornflour over a small fire. When it's done, spread it out on a tray. Remove marshmallow from mould after 2 hours, and dust on cornflour.</li>
