Sleeping Cat Wrap and Sandwich

We are going off for our holiday this sunday, just a short trip, will be back again on wednesday. It's unlikely that we will have internet access this time, have scheduled a post for next week, it will be up if my autopost works. Sorry, no time and not hardworking enough to schedule more posts, lol, you probably would have guessed, from my loss of blogging mojo lately.

This was lunch for my boys and I a couple of weeks back. I decided to make some wraps for our lunch as I was bored with our usual noodles/rice/sandwich.

I love wraps, it's a fast, fuss-free one dish meal, not to mention easy to eat on the go as well. I filled the wraps with eggs, teriyaki pork and lettuce.

Sleeping kitty is made from egg and nori.

I also made sleeping kitties in sleeping bags. IT went for his first overnight camp at the beginning of the school holiday. He got to sleep in a sleeping bag under the ocean tunnel in the S.E.A Aquarium, so very cool!

Here's how to make your own sleeping kitty sandwich. Prepare one hard boiled egg. Slice egg into half.

Use half of the egg for the head. Cut out kitty's hand and ears from the other half.

Cut out your bread, using the egg as a guide.

Fold bread over egg and secure everything using pasta.

I used this puncher for kitty's nose, the other details were cut out using nori. Dot on blusher with some decor gel or ketchup.

And it's done, pretty easy to make. :)

Line Brown & Cony Steam Cake

I'm sharing another design for steam cake I made sometime back. Oops, I know I'm a little slow when it comes to updating the blog. -_-

Brown and Cony steam cakes made using Morinaga pancake mix. If you can't get hold of the pancake mix, you can click HERE to refer to my previous recipe instead.

These were made during the school term and my boys had them for snacks and also brought them to school for recess the following day. Recipe for both designs are below.

CONY STEAM CAKE

Ingredients:
(makes 4-5 steam cakes)
150g Morinaga pancake mix
2 small eggs
30g sugar
45g milk
45g plain yoghurt
20g unsalted butter, melted
1 tsp baking powder
1/2 + 1/2 tbsp plain flour
1/2 tbsp cocoa powder
a little Wilton pink icing paste
a little Wilton red icing paste

Method:
  1. Whisk egg and sugar in mixing bowl.

  3. Add in yoghurt and milk till well blended.

  5. Stir in melted butter.

  7. Sift in pancake mix and baking powder and fold till well blended. Set aside 1 tbsp of the mixture and fill it in a pipping bag, you will need it for step 11 later.

  9. Scoop 1 tbsp of batter from step 4, add 1/2 tbsp of flour. Add on some pink colouring using toothpick,  mix well. Spoon in pipping bag.

  11. Scoop 1 tbsp of batter from step 4, add 1/2 tbsp of dark cocoa powder,mix well. Spoon in pipping bag.

  13. Scoop 1 tbsp of batter from step 4, add in 1/2 tbsp of flour. Add on a little red colouring using toothpick. Mix well. Spoon in pipping bag.
  14. Fill cupcake cups with remaining mixture, fill till around 70% full. Tap cups lightly to remove air bubbles.

  16. Pipe on Cony details. Do not throw away the pink batter after this step, you still need it for step 11.

  18. Steam cupcakes over preheated steamer on low heat for 12 minutes. When steaming, please cover pot lid with a cloth, to prevent water from dripping onto the cakes and spoiling the designs.

  20. Pipe out ears using white batter from step 4 and pink batter from step 9. Pipe on a tray lined with baking paper, steam for around 3 minutes.

  22. Make a cut with a knife on the cake, so that you can slot in the ears.

BROWN STEAM CAKE

Ingredients:
(makes 4-5 steam cakes)
150g Morinaga pancake mix

20g unsalted butter, melted
1 tbsp cocoa powder
1 tsp baking powder
1/2 tbsp plain flour
1/2 tbsp cocoa powder
a little pink food colouring

Method:
  1. Whisk egg and sugar in mixing bowl.

  7. Sift in pancake mix, and baking powder and fold till well blended. Scoop out 3 tbsp of batter to be used in step 5, 6 and 7. Add in cocoa powder and mix well. Set aside 1 tbsp of the mixture and fill it in a pipping bag, you will need it for step 11 later.

Totoro Birthday Sushi Cake

It's LT's 7th birthday last week. He is growing up so fast and yet he is still very much our baby at home. I have been worried about whether he can cope in primary school, but he has done surprisingly well so far, which is a huge relief for me.

I made a Totoro sushi cake on LT's birthday. I'm not sure if you can tell, but it was a super rush job making this. I had not much time left, as I was baking his birthday cake before this and it took longer than I planned. -_- This was not the original idea, I ended up making a simpler version instead. I was so tempted to remake this the next day, but I stopped myself as it would have been meaningless as his birthday was already over. My boys thought it was nicely done though, which is a huge consolation. I think I will most likely remake this again next year.

The cake was rice stacked with smoked salmon and ebikko. The roses were rolled up smoked salmon. Totoro was made using mashed potato, did not have time to mould them nicely, hiaz. :( I also cooked LT's favourite fried chicken that day, did not have time to arrange the food so I left it out of the picture.

Birthday cake requested by LT, he chose the picture and I got it printed on an icing sheet.

The cake is a strawberry shortcake which my boys always order on their birthday without fail, lol. You can get the recipe HERE, I always use back this recipe that they like.

LT also requested for cookies to give his classmates and teachers, so I baked butter cookies for them. Butter cookies recipe can be found HERE.

I used some of the birthday cake batter and whipped cream to make some rose cupcakes.

I've always wanted to make these, surprisingly these roses were rather easy to pipe. :)

Panda Somen

Rather unmotivated to blog since it's the school holidays, lol. Had wanted to blog about LT's birthday, but I've yet to sort through the photos, so here's a fast post about an earlier somen lunch I made instead.

An easy panda somen for for my boys' lunch. I actually could not decide on which panda design to make, finally settled on this, but I think I will be making more versions of panda somen next time.

I usually have a stash of gyozas in my freezer, pan-fried some to go with the somen.

Panda details were done using nori, cheese and ham. The bamboo the panda is holding onto is a stalk of blanched asparagus.
