Piggy Steam Cake

It's Friday again, we still cannot relax much this weekend, IT still has one last exam paper next Monday. LT has exams next week but his are minor tests, which won't take up much revision time.

It's been a long time since my last attempt at steam cakes. This time, I made piggy steam cakes.

I used Morinaga pancake mix for this recipe. If you can't get hold of the pancake mix, you can click HERE for my other steam cake recipe instead.

I'm sharing the recipe for these piggy steam cakes below.

PIGGY STEAM CAKE

Ingredients:
(makes 4-5 steam cakes)
150g Morinaga pancake mix
2 small eggs
30g sugar
45g milk
45g plain yoghurt
20g unsalted butter, melted
1 tsp baking powder
1/2 tbsp plain flour
1/2 tbsp cocoa powder
a little Wilton pink icing paste

Method:

  1. Whisk egg and sugar in mixing bowl.

  3. Add in yoghurt and milk till well blended.

  5. Stir in melted butter.

  7. Sift in pancake mix and baking powder and fold till well blended.

  9. Scoop 1 tbsp of batter from step 4, add 1/2 tbsp of flour. Add on some pink colouring using toothpick,  mix well.

  11. Scoop 1 tbsp of batter from step 4, add 1/2 tbsp of dark cocoa powder,mix well.

  13. Spoon mixture in step 5 and 6 in pipping bags.

  15. Fill cupcake cups with remaining mixture, fill till around 70% full. Tap cups lightly to remove air bubbles.

  17. Pipe on piggy details, start with the pink batter, followed by brown batter.

  19. Steam cupcakes over preheated steamer on low heat for 12 minutes. When steaming, please cover pot lid with a cloth, to prevent water from dripping onto the cakes and spoiling the designs.

  5. Thank you so much for the info, Caitlin. I've often get questions on whether they can be replaced with regular pancake mix but I've yet to try it out. Now, I know it works. They have to be refrigerated if they are to be consumed the following day or so. They taste best when slightly warm, so you can steam or microwave them just b4 eating.

    1. Yes, butter can be replaced by vegetable oil. As for pancake mix, I've yet to try others, but from the comment above yours, seems to work well too.

  7. Hi, the batter seems a bit sticky and thick when I try to pipe on the design, but I've followed all the measurements. Is it supposed to be like that?

    1. Hi! Not sure about the sticky bit as I did not touched it with my hands. It is a little thick but still can be poured kind of texture. If you followed the measurements, it should be ok, as I've received successful feedbacks from people who tried. :)

    1. Most likey it's due to you pipping mixture being too thin. Please only use gel colourings and thicken with flour as in the recipe.

  11. Hi, can I know which brand of Cocoa powder you are using? I bought Hershey Cocoa powder but my batter become sticky and not watery that I can use for designing. Thanks.

    1. I'm using Hershey too. The batter does becomes thicker but should still be able to draw. You can try to reduce the powder a little. But the batter cannot be too watery, else the drawings would disappear after steaming.

  15. Tap cups lightly to remove air bubble mean what? What mean tap cups?

    1. Use your fingers to tap the cup.Or use a toothpick to poke the bubbles.
