Baked Donuts

I made some baked donuts for the boys' teatime on Monday, recipe at the bottom of this post. :)

Baked versions are different from the fried ones, but healthier and taste great too. :)

Oh, I've to share this. Found these sandwich boxes at the Sanrio Fair at Harbourfront centre yesterday. They are only $5 each. The fair is still on, go grab! Not sure when's the last day though. :)

BAKED DONUTS

Ingredients:
220g cake flour, sifted
170g granulated sugar
2 teaspoons baking powder
1/4 teaspoon fresh ground nutmeg
1 teaspoon salt
3/4 cup buttermilk
2 large eggs, lightly beaten
2 tablespoons butter, melted

Method:
  1. Preheat your oven to 200°C.
  2. Prep your donut pan with butter.
  3. In a bowl, combine the melted butter, buttermilk and beaten eggs. Set aside.
  4. In a large mixing bowl, sift together the cake flour, vanilla sugar, baking powder, nutmeg and salt. Pour in the wet ingredients and mix until just combined.
  5. Spoon the batter into the wells of you pan (roughly 2/3rds full). An easier/cleaner option is to pour the batter into a ziplock bag and snip the corner or use a piping bag and pipe the batter into the pan.
  6. Bake for 7-9 minutes, or until the tops of the donuts spring back when lightly touched. Do not over bake.

  2. Ming, the Sanrio fair is still around on Fri but the sandwich box was sold out...sob! sob!! :( Will hv to wait for ur 400th bento giveaway!!! I saw similar lunchbox in Mothering Corner blog too but dun remember seeing it in any online shop. Fm Emily

    1. Emily, my friend went down yesterday n the salesgal told her a lady bot a whole carton the day b4. I think bentocraft n jmama hv but diff designs. I've a Elmo sandwich box for my 3rd giveaway, coming soon. :)

  3. Whole carton!!! Gosh! Why did she buy so many!!!!! Actually I already hv 3 of such type of lunch boxes but they r without the extra base. Anyway we will never complain of having extra bento stuff esp it is cheap....hee hee
