Hello Kitty Steam Cake

It's the National Day weekend over here in Singapore. School was off early on Friday, and there's no school tomorrow. Unfortunately, the rest of us caught the stomach flu from LT on Friday. My hubby and me have recovered today but IT is still unwell. What a way to spend our holiday. :( On a positive note, at least it happened over the holidays and we have time to rest and recover. Praying IT gets well by tomorrow as he has exams next Tuesday and Wednesday. Unfortunately, he has not been able to do much revisions as he has been sleeping most of the time due to the stomach flu.

I was looking at the date of these Hello Kitty steam cake photos and realized I made them in May. I had wanted to update the recipe earlier but somehow kept dragging till now.

Hello Kitty steam cakes were made using Morinaga pancake mix. If you can't get hold of the pancake mix, you can click HERE to refer to my previous recipe instead.

HELLO KITTY STEAM CAKE

Ingredients:
(makes 4-5 steam cakes)
150g Morinaga pancake mix
2 small eggs
30g sugar
45g milk
45g plain yoghurt
20g unsalted butter, melted
1 tsp baking powder
1 + 1/2 tbsp plain flour
1 tbsp cocoa powder
a little Wilton pink icing paste
a little Wilton yellow icing paste

Method:
  1. Whisk egg and sugar in mixing bowl.

  3. Add in yoghurt and milk till well blended.

  5. Stir in melted butter.

  7. Sift in pancake mix and baking powder and fold till well blended. Set aside 1 tbsp of the mixture and fill it in a pipping bag, you will need it for step 10 later.

  9. Scoop 2 tbsp of batter from step 4, add 1 tbsp of dark cocoa powder,mix well. Spoon in pipping bag.

  11. Scoop 1 tbsp of batter from step 4, add in 1/2 tbsp of flour. Add on a little yellow colouring using toothpick. Mix well. Spoon in pipping bag. Scoop 2 tbsp of batter from step 4, add on some pink colouring using toothpick, mix well. Spoon in pipping bag, set aside for step 10 later.

  13. Fill cupcake cups with remaining mixture, fill till around 70% full. Tap cups lightly to remove air bubbles.

  15. Pipe on Hello Kitty details, brown for eyes and whiskers and yellow for nose.

  17. Steam cupcakes over preheated steamer on low heat for 12 minutes. When steaming, please cover pot lid with a cloth, to prevent water from dripping onto the cakes and spoiling the designs.

  19. Pipe out ears using white dough from step 4. Pipe out bow using pink dough from step 6. Pipe on a tray lined with baking paper, steam for around 3 minutes.

  21. Make a cut with a knife on the cake, so that you can slot in the ears.

  1. When people add pasta to bentos and food, is it fried pasta? Just a curiosity question. I was wondering how the pasta put affects how the person eats it because in this case, the steam cake is soft and there is suddenly a hard pasta.

    1. It's usually uncooked pasta, if you are having the food later, the moisture in the food will soften the pasta after a while. However, if you are having it immediately, it's better to use fried pasta.

  5. Hi, I tried your recipe. After steaming my hello kitty whiskers didnt appear like yours. Mine was both at the nose area..n nose n eye disappear. Any ideal why? Thanks

  6. Hi Bentomonster, can I double check is all ur batter scoop out all is in tbsp? My yellow mixture 1 tbsp plus 1/2tbsp of flour its thick.. after steam it gone. Same for e cocoa mixture 2tbsp w 1/2 tbsp cocoa.I am using hershey n I reduce the cocoa powder the eye sink to the bottom...? Can u help me out what wrong w my batter n mixture? Thank.
    I also tried your strawberry shortcake its a wonderful pcs of recipe ☺

    1. Hi! The measurements are correct, you basically add half amount of flour to amount of mixture scooped out. So if you scoop out 1 tbsp of batter, you add 1/2 tbsp of flour. The mixture should be thicker than the original batter, if it's not, it will disappear after steaming. Usually thicker should not sink, but if you add too much and it's too thick, it will be difficult to draw out. For the colouring, you have to use Wilton gel colours, or other colourings that does not dilute the mixture. Lastly, you have to cover the lid of the steamer with a cloth, if water drips in, it will affect as well.

  8. Hi...i wish to know you are using hard cupcake paper to steam? Coz some ppl i see they use thin cup paper they need put a alluminum cup below to support when steam..

    and can i use any to replace the plain yougurt?

    1. Yes, you need a hard cupcake paper to steam. Alternatively, like you mentioned, you can use soft one in an aluminium cup. Or use a ramekin direct. U can replace with heavy cream.

    4. No brand coz I used yoghurt but cream is a substitute to yoghurt for this recipe. Yes, can too, just that when eating, need to scoop out out the cake.

    3. Sorry, I never take note how long, just mix till well combined and no more lumps. But if you prefer, go ahead and use mixer, it's fine too.

  10. HI..THE ICING COLOUR YOU USE PASTE OR GEL? IT IS SAME TO USE?

    1. The one I used is wilton icing paste, not gel. I've not see wilting icing gel, if you are referring to Wilton decorating gel, then that one is not suitable. You need something concentrated and won't thin down the batter, if the batter for drawing end up thinner than the base batter, it will sink so the cake will end up without any drawings.
